Lemon, Pea & Spicy Chicken Sausage Pasta
Serves: 4
ingredients
3 cups pasta (My favorite is Montebello Organic Pasta which you can find at Whole Foods, Walmart, and Thrive market)
1 cup peas (I always love having frozen peas on hand!)
2 cup mushrooms, sliced
5 cloves of garlic, minced or pressed
3 spicy chicken sausage links, cut into 1/2-inch rounds (My favorite is Brat Hans Organic Andouille Chicken Sausage)
1.5 Tbsp. parsley, chopped
1 Tbsp. freshly grated parmesan
1.5 Tbsp. lemon zest
2 Tbsp. extra virgin olive oil (EVOO)
directions
1. Defrost peas if frozen in a sauté pan, then place to the side.
2. Place pasta in boiling water and cook until al dente.
3. In a large sauté pan place 1 Tbsp. of EVOO, garlic, mushrooms, and sausage slices. Sauté the mushrooms until soft and sausage until browned.
4. Add in the peas, cooked pasta, the rest of the EVOO, parsley, lemon zest, and parmesan. Mix well and enjoy!
I can’t say we make this dish too often, but when I do it always wins Pat over. This is such a comforting dish that reminds me of being back in Italy. It’s also so simple to make. I love it paired with a glass of my favorite organic red wine from Trader Joe’s.
